I believe my OLED panel’s auto-dimming feature is throwing my calibrations off, but what can I do to prevent it from affecting calibration? Do I simply maximize the patch and hope for the best?

Maximizing the patch is the opposite of what you should be doing. Making the patch as small as possible and decreasing the total patch count, in conjunction with white level drift compensation, pattern insertion, and setting patch sequence to “maximize lightness difference” is likely to help.

I see that pattern insertion is only available if I set the display to “madVR.” Can that be used for a standard calibration? Also, are the default settings (Interval, Duration, Level) fine to leave as-is?

Yes, using madVR/madTPG is fine. The default pattern insertion settings are pretty aggressive so should be able to deal with auto-dimming, but YMMV.
