After reading thru the installation guide for DisplayCAL, it mentions a new driver needs to be installed if you have Colormunki Photo/Design – can this driver be updated thru device manager back to the original (X-Rite) if I have to use the X-Rite software that came with the Colormunki at a later time. Basically switch between device drivers when needed. I would assume that DisplayCAL doesn’t change anything internally that would conflict with using the other software at a later time.

Yes, this is outlined in the documentation (if you happen to have done this before for other drivers, then you’ll know the procedure already).
