I’m wondering, would I just need to one profile each for SDR and HDR, then create 3dLUTS from them. Or would it be better to profile for each 3DLUT colorspace. Thanks

No because SDR mode and HDR modes (OSD) will behave in different way.
I can use native gamut form a SDR photo display and make several LUT3D for SDR colorspaces on same OSD mode. But you are doing a very different thing, you cannot describe several OSD modes with just one profile.
The opposite can be done, use an SDR display on some OSD mode (SDR) and create several SDR (desktop, general use) and HDR LUT3Ds (for supported apps) for that OSD mode.
